Step 1: Make Chocolate-Covered Potato Chips a Unique Snack
Plug in your Wilton chocolate melt or set up your double boiler. Make sure the water doesn’t touch the bottom of the heat-safe bowl. The steam is the secret to creating the smooth chocolate for covering crisp, wavy potato chips.
Pringles Warning: I don’t recommend using Pringles. (I had them in the house, tried this, it was a failure. Pringles have a distinct flavor.) Use Lays Wavy chips or Ruffles instead. Trust me, they have a sturdy base for this special treat. Using Lays Wavy chips ensures each bit of these chocolate-covered potato chips has the perfect crunch and blends perfectly with the dark chocolate or creamy chocolate for your salty potato chips to be the perfect special treat.
Cindy’s Potato Chip Note: Avoid high temperatures, as this can seize the chocolate. Using a double boiler is the best way to maintain smooth chocolate, whether dark, white, or even milk chocolate-covered potato chips.
Step 2: Prep the Chips for the Perfect Salty Combo
Next, toss your smooth Lays crispy potato chips into a Ziploc plastic bag. Press out the air, then gently use your hands to crush the chips into small pieces. Set them aside; these crispy potato chips combined with melted chocolate form the ideal salty snack.
Cindy’s Tip: When melting chocolate, keep water away. Make sure your silicone spatula is completely dry. A drop of water will cause chocolate to seize, especially white chocolate.

Melt dark chocolate or white chocolate in your heat-safe bowl over a double boiler or candy melt setup. Add a teaspoon of vegetable oil; this helps give your chocolate a smooth, tempered look. Place your parchment paper on your baking sheet and add the wavy potato chips. I was able to fit 16 wavy potato chips on each baking sheet. Cindy’s Note: The first time I made these chocolate-covered chips, I skipped the extra sprinkle of potato chips. Big mistake! When I took a bite, it was too much chocolate and not enough of that sweet, crunchy, and salty combo I was going for. That’s when I knew a little extra crispy potato chips on top would make the difference.

True Story: A Unique Snack Started with a Crunchy Chip
Okay, truth time, I’m a little embarrassed to share this story. I remember spotting this unique snack on sale at Neiman Marcus for $35. I was young, working, and honestly proud of myself, so I brought them home, shared them with my family, and told everyone I scored them at a great price. But when I mentioned what I paid, they burst out laughing, “You could buy a crate of potato chips for that! Now that I’m older and wiser, I can laugh too. Good thing, it inspired me to come up with an easy way to make a better version of this chocolate crunchy chip.
Easy Way to Make a Double Boiler
Here’s an easy way to make a double boiler using items you have in the kitchen! Grab a saucepan and a shallow, heat-safe bowl. The bowl should fit over the saucepan so that the edge touches the edges of the saucepan; this traps the steam. Make sure the water doesn’t touch the bottom of the heat-safe bowl. Normally, I’d show a glass bowl, but I dropped it while getting ready for this photo.
Cindy’s Tip: The steam gets hot! For safety, wear an oven mitt to hold the bowl stable when stirring. This is the best way to avoid burns.
Melting Chocolate in the Microwave
I’m not a big fan of melting chocolate in the microwave because high temperatures may cause the chocolate to melt unevenly, seize, and become clumpy. You also must decrease the quantity of chocolate. This is why I’m a huge fan of Wilton Chocolate Melt. However, if you want to use this technique, here’s the trick: add one teaspoon of vegetable oil to the chocolate. Melt the chocolate in 25-second intervals and stir in between. If it is not smooth, set the time to 15-second intervals until smooth.
Choosing the Best Chocolate for Salty Potato Chips
There’s a lot of back and forth about the best chocolate for melting, but after years of testing, here’s what I’ve found. I’m not a fan of melting wafers, for these salty potato chips and other quick desserts, as they set up too fast. They don’t give you time to layer in those crispy salty chips that make this salty snack truly next level. I learned how to melt chocolate over 25 years ago from Debbie Fields (yes, that Debbie), and every one of her tricks works like a charm. Chocolate chips are great if you add a teaspoon of oil and avoid high temperatures. You’ll get smooth, creamy results every time. Save the fancy gourmet chocolate for ganache or more elaborate desserts. For quick treats like these, stick with quality chocolate chips and my easy method!
Can I make these salty treats in advance?
For the best flavor and crunch, I recommend making these salty treats the day of your special occasion or event. They’ll be their crispiest with that perfect salty-sweet snap.
That said, you can make them a day or two ahead. Store them in an airtight container in a cool, dry spot. Avoid the fridge, if possible, as moisture can make them soft.
Storing This Special Treat in Warmer Climates
While it may be tempting to refrigerate these chocolate-covered potato chips in warm weather, it can make them soft and soggy. The moisture in the refrigerator messes with the chips and can cause chocolate to bloom (those white streaks or spots). If you chill them, wrap them tightly in an airtight container with layers of parchment paper, and let them come to room temperature before serving.
Cindy’s Chocolate Storage Tip: I never store my chocolate in the refrigerator. I store it at room temperature in my pantry. It’s cool enough, but it doesn’t cause it to bloom and get the white coating.
