  • Pizza stone, rimless baking sheet, or cookie sheet
  • Pizza peel
  • homemade dough or store-bought pizza dough
  • Pizza screen – (optional)
  • parchment paper
  • cheese grater
  • pizza wheel
  • spoon or spatula to spread jam
  • spatula, wooden spoon, or a meat chopper
  • tablespoon measuring spoon 
  • medium bowl
  • paper towel
  • cutting board
  • sauté pan or frying pan

Ingredients:

  • fig preserves
  • 1 package spicy Italian sausage – (optional)
  • fresh gouda cheese – grated
  • 2 tbsp. olive oil
  • sea salt or kosher salt
  • black pepper

Cooking Sausage Golden Brown

Step 1: Cook Sausage, Small Pieces Until Golden Brown

Begin by bringing the sausage to room temperature for about 10 minutes. This will allow it to dry slightly and ensure even browning.

For the best result, 10 minutes before sautéing sausage let it come to room temperature.  This allows the sausage to dry a bit and brown more evenly. 

Once cooked, use a slotted spoon to transfer the sausage to a bowl lined with paper towels. This will help remove any excess grease.

In a separate small bowl, stir the fig preserves to make them easier to spread onto the pizza dough.

Grate Gouda Or Mozzerlla Cheese

Step 2: Grate Gouda Cheese Or Crumble Blue Cheese

Grate your preferred cheese, such as Gouda, and place it on a sheet of parchment paper for easy access later on. Crumbled Blue cheese is another great option

Preheat your pizza stone in the oven to 500 degrees Fahrenheit (260 degrees Celsius) for one hour. This will ensure a hot surface and result in a crispy crust.

Allow the pizza dough to sit at room temperature for five minutes, this prevents it from bouncing back while shaping. Shape your pizza dough into the classic round shape. 

Sprinkle a layer of cornmeal onto the pizza peel after shaping the dough. This will aid in transferring the dough from the peel to the hot pizza stone and provide a wonderful texture and crunch.

Tip: Avoid using extra flour on the dough, as it can make it tougher. Instead, rely on the cornmeal for easy handling.

Adding Fig Preserves Surface Of Dough

Step 4: Spread The Jam On The Dough

Spread the fig preserves evenly over the surface of the dough, leaving about an inch of crust plain. You can use a flat metal spatula or the back of a metal spoon for this task.

Next, evenly distribute the cooked sausage on top of the fig preserves.

  • Fresh arugula paired, with caramelized onions, and creamy goat cheese.  This also makes a great fancy-ish appetizer.
  • Salty prosciutto, tangy balsamic vinegar, peppery arugula, sweet fig jam, and fresh mozzarella cheese.
  • In a little oil crisp pancetta, add fig preserves, baby arugula, and blue cheese.
  • Slices of mozzarella cheese, mixed with grated asiago cheese and Parmesan Reggiano.  Parmesan Reggiano cheese adds a great nutty flavor to fig preserve sausage pizza.

Tip: When adding arugula to pizza immediately after the pizza is removed from the oven or grill add the fresh greens.

Tip:  Add a bit of fresh lemon juice to the arugula.

Recipe Balsamic Glaze For Your Favorite Pizza:  

  • heavy small saucepan
  • 1 cup balsamic vinegar
  • 3 tbsp. dark brown sugar

Boil the combination of balsamic vinegar and brown sugar on medium-high heat. Reduce to 1/3 cup, and stir occasionally for approximately 18 minutes until it thickens.

Tip:  A drizzle of balsamic glaze is a bit tangy and adds sweetness.  It’s also easy to make!

Tip:  This is delicious over grilled filet mignon and creamy goat cheese.
