Easy Mini Kolaches Recipe
Today, I’m sharing a simple recipe made with grocery store biscuits coated with melted butter and baked until golden brown. This easy mini kolaches recipe uses simple ingredients. It’s my twist on classic Czech kolaches.

Equipment for Easy Mini Kolaches Recipe
- Baking sheet, cookie sheet, or muffin top pans (for baking homemade kolaches)

- Small bowl (for crumble mixture: 1/4 cup sugar, room temperature butter, and 3 tablespoons of flour

Ingredients for Mini Kolaches Recipe
- 2 cans grocery store biscuits (Pillsbury Buttermilk)
- 1/2 cup melted butter
- 2 tablespoons room temperature butter
- 3 tablespoons all-purpose flour
- 1/4 cup of sugar plus 1 teaspoon (an extra teaspoon of sugar is optional)
- 12 oz. fruit fillings (Solo brand pie filling or your favorite)
Step 1: Crumble Mixture: Easy Mini Kolaches Recipe
Place two tablespoons of butter, 1/4 cup of sugar, and three tablespoons of flour in a medium bowl. This allows the butter to come to room temperature to combine the crumb topping for each top of the mini kolache pastry. Set aside to combine later.
Cindy’s Note: Since this isn’t the first time I’ve made these kolaches, I’ve tweaked the crumb topping a bit. Adding an extra teaspoon of sugar gives it a little more sweetness and crunch. When you take a warm bite, you’ll notice that extra crunch right away.
Step 2: Separate Biscuits
Preheat oven to 375 degrees f. After opening the can of refrigerated biscuits, cut them into equal pieces. Each piece of dough (biscuit) should give you two halves.


Step 3: Melt Butter to Coat Dough (Refrigerator Biscuits)
Place 1/2 cup of room temperature butter in a medium microwave-safe bowl or a small saucepan. I melt butter in the microwave for 20 seconds on full power. Carefully remove the microwave-safe bowl with the butter; both will be warm.
Cindy’s Note: If the butter isn’t completely melted, I stir the butter with a spoon. It completely melts.
Step 4: Dip Grocery Store Biscuits
Dip the top side of the refrigerated dough into the melted butter. This makes the top side of the mini kolaches pastry golden brown. Place the kolache dough on the baking sheet, cookie sheet, or muffin top pan butter side up.
Cindy’s Tip: Sometimes I dip the other side of the biscuit half into the butter. This adds extra buttery flavor to this homemade kolache recipe.
Step 5: Slightly Flatten Kolache Dough
Using your fingertips, slightly flatten the kolache dough. Don’t make it too deep. Remember, we are making mini homemade kolaches. You want some of the kolach dough empty. This is a great way to guarantee enough room for the delicious crumb topping filled with smooth butter and sugar.
Cindy’s Tip: Dipping the dough in the butter first avoids the biscuit sticking-to your fingers while flattening slighly.



Step 6: Adding Pie Filling to the Top of Mini Kolache Recipe
Grab your favorite flavors of pie/fruit fillings from the grocery store to add to the top of mini kolache recipe. I use the tip of a small spoon and a clean fingertip. A small fork works too.


Step 7: Combine the Crumb Topping
Using a pastry cutter or small fork, combine the softened tablespoons of butter and sugar. This is the best way to achieve the perfect crumble mixture to surround the pastry filling and great homemade kolacxhes.
Step 8: Generously Sprinkle the Crumble Mixture
Sprinkle a generous amount of the crumble on the top of the mini kolaches pastry. This combination, added to the melted butter, makes these delicious. Place the baking sheet, cookie sheet, or muffin top pan in the oven. Bake at 375 degrees f until the easy mini kolache recipe is golden brown.
What are Kolaches?
Kolaches are from the Czech Republic in Eastern Europe. Czech immigrants brought these to the United States in the early 1900s, where the Czech people formed farming communities in Texas.
In Texas, this Czech pastry, made with simple ingredients, is a sweet yeast dough baked until golden brown. Today, this easy breakfast recipe is known as Texas sausage kolaches, sometimes called a hot dog-style pastry, similar to pigs in a blanket in the United States.
This sweet yeast dough can also be filled with cream cheese filling and topped with fresh fruit or made with a variety of pie/sweet fillings. The best way to enjoy kolaches is as a quick breakfast, snack, or dessert.
Favorite Fillings for Homemade Kolache Recipe (Fruit Fillings)
Solo brand pie filling found in the grocery store works perfectly for this simple recipe. This easy mini kolaches recipe can be filled with a variety of pie/sweet fillings:
- Almond paste – my favorite and my dad’s
- Apricot filling
- Strawberry
- Cherry – also a favorite
- Raspberry – a family favorite
- Poppy seed filling
Where to Find Kolaches:
Most donut shops offer homemade kolaches filled with a variety of fruit fillings. At kolache shops, you’ll often find cream cheese kolaches topped with sweet pastry filling or fresh fruit.
Many donut shops also carry savory versions of warm kolaches, including homemade sausage kolaches. These are often called Texas kolaches, filled with breakfast sausage, and make a hearty breakfast pastry.
First Time I Made This Simple Recipe
The first time I made this simple recipe, I made it as a large dessert. Don’t get me wrong, my first batch was delicious! I’m sharing this to give you another option.
If you prefer a large dessert, don’t separate the refrigerated biscuits. Instead:
- Dip the top of the refrigerated biscuit in the melted butter
- Place it on a baking sheet or cookie sheet with the butter side up
- Use your thumb to create space for the Solom brand pie filling
- I used a rounded teaspoon to fill each kolache. Skip steps 2 and 5. The rest of the directions for this homemade kolache recipe stay the same
I enjoyed this large dessert, but after making mini kolaches, I enjoy them even more.
Storage Tip:
If you’re lucky enough to have leftovers, store the kolaches in an airtight container. The next day, warm them in the microwave until warm. If you warm them any longer, the filling gets too hot, and the biscuit can turn a bit chewy.
