Normally, thick slices of bread are used for this crispy French toast recipe. Once in a while, we indulge in thick slices of bread, but trust me, good white bread works well for this easy recipe. This delicious breakfast recipe is coated with creamy egg batter, pure vanilla extract, cornflake crumbs, and the warmth of a teaspoon of ground cinnamon. Honestly, it’s next level!

Equipment Needed 

  • Large skillet or large nonstick skillet
  • Pie plate, shallow dish, or shallow bowl
  • Ziploc plastic bag
  • Small food processor (optional) or rolling pin (to make fine crumbs)
  • 1 tsp. measuring spoon
  • ½ tsp. measuring spoon
  • 1 glass measuring cup
  • 1 whisk – (to combine the egg mixture)
  • 1 spatula

Ingredients Needed 

  • 6 slices – White Bread- 1-inch-thick slices of bread. Texas Toast or Brioche Bread is great too.
  • 4 cups of cornflakes – fine crumbs â€“ Fresh Cornflake cereal is best
  • 1 teaspoon ground cinnamon
  • 3 tbsps. butter
  • 4 large eggs
  • ½ tsp. Pure Vanilla Extract
  • ½ cup milk or half and half
  • Maple syrup

Step 1: How to Make This Crispy French Toast

Place 4 cups of cornflakes in a food processor to make fine crumbs. Add the crushed corn flakes and 1 tsp. cinnamon to a shallow dish or pie plate and combine. Set aside.

Cindy’s Note: If you don’t have a food processor. Place your corn flakes in a plastic bag. Use a rolling pin to crush corn flakes into fine crumbs.

Step 2: Whip Up the Egg for the Best French Toast

In a pie plate or shallow dish, combine eggs, vanilla extract, and milk and whisk until the egg mixture is airy and light.

Step 3: How to Turn Bread Slices into a Delicious Breakfast

Remove bread from egg batter and gently press each slice of bread into corn flakes. Completely covering the bread slices with cornflake cereal crumbs.

Working with one slice of bread at a time, dip each piece of bread into the egg mixture. Remove the bread from the egg batter and let the excess egg drip off into the shallow dish. Place a large skillet or your nonstick skillet over medium heat. Continue this process with the remaining slices of bread. I find it best to push the cornflake mixture onto the bread.

Cindy’s Note: I wear rubber gloves and add each piece of bread to the egg and 4 cups of cornflakes. I use a walker. It’s easier for me. I hold a walker handle with one hand and dip into the egg batter and cornflakes with the other. This avoids contamination. I used to hate using a walker, but it gives me my independence. So, we are best friends now.

Step 4: Cook Your Cornflake Crusted French Toast Recipe

Add one tablespoon of butter to coat the bottom of your large skillet.  Cook each slice of bread until golden brown. Repeat the process with the remaining melted butter, vegetable oil and white bread.

Cindy’s Tip: You can place your prepared cornflake French toast on a large sheet tray until ready to cook. Push the excess bread crumbs to the side while cooking the slices of bread. You don’t want burnt crumbs on your bread slices. This is a common mistake with cornflake French toast.

Serve this crunchy French toast recipe with warm maple syrup, slices of butter, or your favorite toppings.

Cindy’s Syrup Tip: Heat the maple syrup in the microwave for one minute. I add a ¼ teaspoon of vanilla extract. It takes this easy recipe to the next level.

How Crispy Cornflake French Toast Came Home from the Hyatt Regency

My husband had breakfast with a guy he works with at the Hyatt Regency in Greenwich, CT, and he came home raving about what he called the best French toast ever, crispy cornflake crumbs and all! I had to figure out what he was talking about, and after a few tries in the kitchen, adding just the right touch of cinnamon and a pinch of nutmeg, I cracked it. Now, I’ve been making this delicious recipe ever since. We’re big fans of a delicious breakfast for dinner, and this crispy French toast hits the spot. Traditional French toast used to be my go-to, but this golden brown cornflake crusted French toast recipe makes my taste buds do a happy dance every time!

Cindy’s Note: I’m also a Hallmark movie person. Have you ever seen the movie Bottled with Love? Starring Andrew Walker and Bethany Joy Lenz? He takes a work trip with her, and they stop at a diner. Then, he orders her breakfast without knowing what it is, and says she wishes she knew what he ordered. He says it’s the best thing on the menu. It is a huge stack of pancakes. She gets excited because pancakes are her favorite. Well, that’s me with crispy French toast. French toast makes me happy. Watch the movie, it’s cute.

Is This the Original? A Best French Toast with a Twist 

We thought this recipe was created right here at home some years ago, my husband’s clever way of convincing me to finally share it. But now? I’m not so sure where it came from. After doing a bit of digging, others have a similar version floating around out there. It’s even been served at The Magic Kingdom! The funny part is my husband insists the one he originally had didn’t include nutmeg. When I added a sprinkle of it, he noticed right away, but still says mine is better.

Why does my French Toast get soggy? 

The most common mistake when making French toast is adding too much dairy. Always have more eggs than dairy. Also, choose the right bread. Thicker slices of bread are best. Minimum thickness should be an inch. I don’t add as much vegetable oil as some. I coat the pan with melted butter and vegetable oil. Vegetable oil prevents the butter from burning. This allows the cornflake mixture to get golden brown. If you would like to use more vegetable oil. Use ¼ cup in your large skillet with the melted butter.
