- 6 tblsp butter softened
- 1 cup sugar
- 1 egg room temperature
- 1 egg yolk room temperature
- 1 tsp vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tsps cinnamon
For The Topping
- 1/4 cup granulated sugar
- 1 tsp cinnamon
- 1 egg lightly beaten
Cinnamon Sugar Biscotti
Preheat the oven to 325 degrees
Cream butter and sugar together until light and fluffy. 4-5 minutes
Add the egg and egg yolk and beat well
Blend in the vanialla extract.
In a medium size bowl whisk, flour , baking powder, salt and cinnamon to blend and combine well
Next, add the flour, 1 large spoonful at a time. The ingredients will form a stiff batter
Shape the dough into a log, 3" x 10" on the parchment covered cookie sheet.
Using a pastry brush, brush with the beaten egg.
Mix together the sugar and cinnamon and sprinkle over the batter covering well
Bake 45 minutes.Â
Remove from the oven to cool slightly. While still warm slice diagonally with a serrated knife 3/4 inch slices
Place back in the oven slice side down and sprinkle with the remaining cinnamon sugar mixture
Bake for another 15 minutes
Let the biscotti cool completely on a cooling rack. Store in an air tight container at room temperature for 5 days.
These freeze well so if you aren't going to eat the enitre batch wrap and store in a freezer bag or air tight container.
