1 tsp measuring spoon

1/4cupall purpose flour
4cod fish fillets
1lemonquartered
1tsp.salt
1/4tsp.black pepper
1cuppanko crumbs
1/2cupparmesan cheeseparmesan reggiano or pecorino romano cheese work best
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Spray the sheet pan with cooking spray and set aside.Pat the cod fillets dry with paper towels and set asideSprinkle the cod fillets with 1 teaspoon salt and 1/4 teaspoon pepper set aside Add the flour to a dish and cover the cod fillets completely. Shaking any extra flour offDip each cod fillet into the eggs to coat and remove excessIn a dish mix together the panko breadcrumbs and Parmesan cheeseDip each cod fillet into the panko mixture, pressing the crumbs onto the top of the fish to ensure it sticks.Place the prepared fish fillets onto the prepared baking sheet. Spray the top of the fish with cooking spray to help the coating turn golden brown and crisp.Bake the cod in the preheated oven for 20-25 minutes, or until the crust is golden brown and crispy. The fish will be flaky when cooked through.Remove the fish from the oven and drizzle and serve with lemon wedges on the side.

TIPS:
Tip 1: To ensure the best meal let your cod warm up for 5 minutes before preparation. This will help the flour to stick better to the fish.Tip 2: I'm adding two tablespoons of herbs of Provence.It compliments this fish dish well.Tip 3: I use Wondra Flour for the flour process.
