Ingredients
1boxDucan Hines Chewy Fudge Brownie Mix
1containerpirouette cookies flavor of your choice
1container Vanilla ice cream or flavor of your choice
Instructions
Make the brownies following the directions on the box I suggest making them fudgy style
Break the pirouette cookies in half or leave them the length to fit the size sping form pan you are using
Cut the brownies to size to fit your spring form pan and lightly press into the bottom
grind up the leftover brownies and store in the refrgerator so they are cold
After adding the cookies freeze overnight. This helps the ice cream to freeze better
Freeze overnight
Next day add the ice cream of your choice. Fill to the top and smooth
Sprinkle with the brownie crumbs and freeze at a minimum of overnight

Begin by making Duncan Hines brownies in a 9 x 13 pan and make them fudgy style. I highly recommend fudge style brownies.While they are baking begin breaking pirouette cookies. You can make these the height of the pan you will use for your ice cream cake. I'm using individual spring form pans.Break cookies in half.After the brownies have cooled slightly, begin cutting pieces using the pan and carefully cut with a knife to fit a single size spring form pan. Cut the brownies to fit the individual spring form pans.Press lightly into the bottom of the pan.Add the cut brownie to the pan.Next lightly press the cookies into the brownie filling edges and freeze overnight. Add the pirouette cookies around the outside and push lightly into brownieFreeze these overnight. This will make this very cold, so the cookies are frozen into place. And helps the ice cream get firmer when added and frozen.Let the brownies and cookies freeze overnight.Any leftover brownies place into a small food processor to grind. After grinding them place this in a bowl and let them sit in the refrigerator overnight. I also did this because the brownies are fudgy and needed to stiffen. After extra brownies are ground up in the food processer store in the refrigerator overnight. They will be stiff. No worries move them around with a spoon to loosen and sit at room temperature.The next day remove the crumbs from the refrigerator, and they will be stiff. Don't be concerned. After adding one scoop of vanilla ice cream for the cake's smoot with the bottom of a glassUse a drinking glass to press the ice cream slightly to flatten.
