Pumpkin Oatmeal Cookies
These cookies are easy, light and delicious
1 package Betty Crocker Oatmeal Cookie Mix
2 cookie sheets lined with parchment paper
1 room temperature egg in a bowl
1 stick softened butter
1/4 cup pure pumpkin puree
1/4 cup flour
dash of nutmeg
1/4 cup of chips of your choice, I used Ghiardelli white chocolate chips mixed with coffee chips
Add the package of cookie mix, nutmeg and flour to a mixing bowl and using a wire whisk mix well
Next add the egg, softened butter and room temperature egg and combine. Before mixing completely add the chips and mix well
Scoop cookies using a cookie scoop. Measurement should be flat to the cookie scoop.
Bake for 12 minutes. Allow cookies to cool for 1 minute on cookie sheet.
Remove and cool completely on a cooling rack.
