Quick 4th of July Dessert

Hello everyone, 4th of July is around the corner, wow!

Ready for a quick yummy dessert the kids could even help with for family fun?

Items Needed:

1 box your choice box cake mix. Duncan Hinse is my go to for quick cake.

Ice cream flavor of your choice.

8 or 9 inch cake pans

Spring form pan

For my ice cream cakes I used individual spring form pans. 8 or 9 inch spring form pans are great sizes too. Cakes are usually made in those sizes, those choices would be even easier.

I have mini cake pans so I used them.

For 8 or 9 inch cake pans, make the cakes according to boxed directions. You need two cake pans.

When using 8 or 9 inch cake pans I usually buy a half gallon of my favorite flavor of ice cream.

Once the cakes are cooled add one layer to the bottom of your spring form pan.

For individual sized, I crumbled up the cake and pressed the cake down to make it solid for the bottom.

The kids could help you with the next step. Press the layer down a bit. It should work easily and if it tears a bit no big deal just pushed it in a bit.

Take your ice cream out to get a bit soft, it should look similar to this. You don’t want it to get too soft because it will not refreeze good enough.

Add your first layer of ice cream. I use the back of a metal spoon dipped in a glass of water to smooth out the ice cream. Place back in the freezer.

Next, take your second layer and place it on top of your ice cream. Push that layer down to give you room for your second layer of ice cream. Smooth the ice cream again and use an offset cake icing spatula to make the ice cream. nice and smooth.

To make the top a bit festive and pretty I used crumbled extra cake I had for the top and sprinkled with red, white and blue sprinkles for the 4th of July.

You could get creative with the top and crumble cookies or just use sprinkles or even chopped up nuts with the sprinkles.

I placed this on a domed cupcake plate I won in a giveaway from Linda at Life and Linda  

Freeze your cake for a good 24 hours before serving.

My family and friends love these and want this over store bought ice cream cakes every time.
