I’m starting to get back to my love of cooking and baking.  I will be sharing recipes from time to time. 

Besides painting and making projects, cooking and baking make me happy.  What can I say, I’m an Italian girl and we love to feed people.  Life is too short and you have to enjoy your food.  Beside, I exercise six days a week and I’m not going to not enjoy my GOODIES!  I take my Saturdays and Sundays and try to make nicer meals and dessert.

The week days are hectic with John commuting to the City.  Although, we have gained much more time together.  At least a half hour to 45 minutes during the week nights.  That’s huge for us when it comes to enjoying little things.  Like watching the NY Mets every night they are on, enjoying spending time together and of course Daddy like being able to see his fur babies more.  Daddy spoils them very much.

Easy Open Laced Kolaches

2 10 oz. cans Hungry Jack Flaky Biscuits (if unavailable regular Pillsbury Grand biscuits work)

½ cup butter melted

12 oz. Solo filing – I used Almond for this time, EXCELLENT!!!

2 tbs. butter softened

3 tbs. flour

¼ cup sugar

Heat oven to 375.  Separate biscuits.  Dip one side of biscuit into melted butter.  Place butter side up on cookie sheet.  Make large thumb print in center of each biscuit.  Tip:  I use a measuring spoon, tablespoon size to make the hole.  Neater and works better than the finger.  Use a bit of butter on the end of the measuring spoon.   Fill with heaping tablespoon of filling.  Combine remaining ingredients, mix well.  This can be mixed with a pastry cutter or a fork, which ever you have to work with, I’ve used both.  Sprinkle mixture evenly on each roll.  Bake for 15-20 minutes.

Tip: If any remaining the next day microwave for 10 seconds.  Makes them warm and YUMMY all over again

This is a recipe that is very easy and tastes great and can be made quickly.  Another bonus, it can be eaten in the morning, brunch, dessert doesn’t matter.  These taste like your own mini Danish.  So make a cup of your favorite tea or coffee and enjoy.
