Lemon Spaghetti With Fresh Picked Basil
For our dinner on Sunday I made some sautéed shrimp and Giada’s Lemon spaghetti recipe. It came out really great; John and I enjoyed every bit of it.
We try to make a nice Sunday dinner every week. We enjoy being in the kitchen together.
Lemon Spaghetti and Sautéed Shrimp
Lemon Spaghetti recipe:
1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.
Oil, Grated Parmesan, Fresh Basil, and Lemon Juice
Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.
This dish is great with everything from, fish, steak on the grill and chicken you just can’t go wrong and it is so simple but fantastic.
The shrimp we just sautéed in olive oil and I sprinkled it with bread seasoning spice which is a Sicilian blend it is very good. I have done this with just salt and pepper and that is great also.
I also, took a nice fresh loaf of Italian bread and cut into slices and I heated 2/3 cup olive oil with a tablespoon of oregano, some black pepper and salt and I bring the olive oil to a simmer and let it stand for 15 minutes. I then brush each side with the mixture and put it in a 400 degree oven for about 10 minutes or until crispy. I sometimes sprinkle the top with freshly grated parmesan cheese, it is outstanding.
